Hey there ladies & gents, we're Adam and Clay.
We're just two laid-back Southern fellas who bonded over the sweet, sweet bliss that is Cajun & Creole cooking when we were just undergrads at LSU. And now we've brought our authentic Southern recipes to the East Coast.
Our first mission: bridge the gumbo gap in NYC.
Clay Boulware // Co-founder & Head of operations
As a Louisiana native, Clay knows good gumbo.
His passion for good food is trumped only by his Southern Hospitality. This is probably why Clay has spent over a decade in all aspects of the hospitality business. He is dedicated to providing his customers with not just a great dining experience, but a great moment in their day.
Clay is a graduate of Louisiana State University and a native of Alexandria, Louisiana.
Fun fact: he's an avid cyclist and film enthusiast.
adam Lathan // co-founder & Head of cuisine
Adam started cooking at a young age and creating the perfect pot of gumbo soon became his obsession.
Having learned the "proper" gumbo technique from his great-grandmother Nanny, Adam is still pursuing the perfect gumbo and works tirelessly to ensure his customers have their culinary minds blown.
Adam is a graduate of Louisiana State University and the International Culinary Center (formerly the French Culinary Institute) and a native of the Gulf Coast of Alabama.
When he isn’t cooking, Adam is likely cheering for his beloved New Orleans Saints or talking baseball with a stranger at a bar.
