Our Story begins with 2 Southern-raised buddies, Adam & Clay, both proud LSU Alums, who had a hankering for authentic Cajun cuisine in the Big Apple.
In 2014, with a truckload of moxie and a dash of southern charm, they decided to start serving up Cajun favorites in Madison Square Park. As luck would have it, they found a perfect spot for the first Gumbo Bros restaurant, which opened in December of 2016 to rave reviews from New Yorkers and Cajuns alike.
And the rest, as they say, is history...
Clay Boulware // co-founder
As a Louisiana native, Clay knows good gumbo.
His passion for good food is trumped only by his Southern Hospitality. This is probably why Clay has spent over a decade in all aspects of the hospitality business. He is dedicated to providing his customers with not just a great dining experience, but a great moment in their day.
Clay is a graduate of Louisiana State University and a native of Alexandria, Louisiana.
Fun fact: he's an avid cyclist and film enthusiast.
Adam Lathan // co-founder & chef
Adam started cooking at a young age and creating the perfect pot of gumbo soon became his obsession. Having learned the "proper" gumbo technique from his great-grandmother Nanny, Adam is still pursuing the perfect gumbo and works tirelessly to ensure his customers have their culinary minds blown.
Adam’s cooking has gone on to receive high praise from customers and press alike, having been positively reviewed and featured in: The New York Times, The Wall Street Journal, New York Magazine, Grubstreet, Eater and many other publications. Adam has been selected to cook at the Food Network’s New York Food and Wine Festival for 3 consecutive years and has been a guest speaker at the New York Restaurant Show in 2017 and 2019.
Adam is a native of Mobile, Alabama, is a graduate of Louisiana State University, the International Culinary Center (formerly the French Culinary Institute) and a member of the James Beard Foundation.
When he isn’t cooking, Adam is likely cheering for or talking about his beloved New Orleans Saints.
Kai Tate // catering & events manager
The daughter of a Texan and Mississippian, raised on the east coast of Florida, Kai has been with The Gumbo Bros since they've opened the doors.
An unabashed lover of food, particularly chicken in all of its fried forms, she abandoned office life when she moved to the city and began working in outdoor food markets. Starting out working the counter at the restaurant and she now heads up the catering department.
You can find her running around the city delivering custom orders and stopping to taste everything the city has to offer along the way. She's also a fervent cat lover and will gladly show you a million pictures and videos of her stepson, Desean Catson.
Trey Cregan // beverage manager
A native of Florida and an avid traveler, Trey came to work at TGB on opening day in 2016 and has been here ever since.
Trey heads front of house operations and maintains the beverage program at TGB. Trey takes great pride in our beer/wine collection and ensuring that all guests have a pleasant experience and listen to heady music along the way.
Fun Fact: He was born on National Margarita Day and grew up on Edwards Air Force Base in California, a few hours from Area 51.
